Hi friends! I just returned from a family vacation in Punta Cana. We stayed at the Nickelodeon All-Inclusive Resort in Punta Cana and had a blast! But, after a week of eating and drinking, I’m ready to get back on track this week!

Skinnytaste Dinner Plan (Week 62)

Pictured above is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here

Monday: Chicken Sweet Potato and Kale Soup
Tuesday: Perfect Filet Mignon for Two with Garlic Roasted Cauliflower with Toasted Asiago Breadcrumbs
Wednesday: Bangin Good Chicken Salad
Thursday: Crock Pot Italian Sloppy Joes
Friday: Leftovers
Saturday: Dinner Out
Sunday: Flounder Piccata with Raw Shredded Brussels Sprouts with Lemon and Oil

Shopping List:

CHICKEN SWEET POTATO AND KALE SOUP

  • 2 chicken breasts, on the bone
  • seasoning salt (such as adobo)
  • olive oil
  • onion
  • celery
  • garlic
  • dried oregano
  • dried thyme
  • ground cumin
  • reduced sodium chicken broth
  • sweet potato
  • kale
  • jalapeno
  • fresh cilantro

PERFECT FILET MIGNON FOR TWO

  • 2 (6 oz) beef tenderloin filet mignon steaks
  • olive oil cooking spray (I used my mister)
  • kosher salt and fresh cracked pepper

GARLIC ROASTED CAULIFLOWER with TOASTED ASIAGO BREAD CRUMBS

  • cauliflower
  • garlic
  • olive oil
  • salt and fresh cracked pepper
  • onion
  • seasoned breadcrumbs
  • shredded Asiago cheese
  • fresh thyme (or fresh herb of your choice)

BANGIN GOOD CHICKEN SALAD

  • olive oil spray (I used my Misto)
  • olive oil
  • whole wheat Italian seasoned breadcrumbs
  • panko
  • 16 oz (2 large) skinless boneless chicken breasts
  • kosher salt and pepper
  • shredded romaine
  • shredded red cabbage
  • light mayonnaise
  • scallions
  • Thai Sweet Chili Sauce
  • Sriracha

CROCK POT ITALIAN SLOPPY JOE

  • 1 lb Italian turkey sausage
  • onion
  • garlic
  • red bell pepper
  • green bell pepper
  • crushed tomatoes (Tutorosso)
  • dried rosemary
  • salt and fresh cracked pepper
  • whole wheat 100 calorie potato rolls
  • reduced fat provolone (Sargento)
  • baby spinach

 

FLOUNDER PICCATA

  • flounder filets (17 oz total)
  • freshly ground black pepper
  • 2 large egg whites
  • 2/3 cup seasoned bread crumbs
  • olive oil spray (about 1 tbsp worth)
  • 1 tbsp light butter
  • juice of 1 lemon, lemon halves reserved
  • 1/4 cup dry white wine
  • 1/2 cup fat free chicken broth
  • 1 tbsp capers, drained
  • sliced lemon, for serving
  • 2 tbsp chopped fresh parsley, for serving

 

RAW SHREDDED BRUSSELS SPROUTS with LEMON AND OIL

  • brussels sprouts
