Skinnytaste Dinner Plan (Week 83). This week I added Peruvian Lomo Saltado to the menu. Guys, if you haven’t tried this I highly recommend it! You can also make it with chicken in place of beef. It’s my anniversary this week, so Saturday we are going out for dinner the rest of the week I am keeping the meals pretty simple and of course, I am testing new recipes I will be sharing this week.

Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. Wednesday: Lomo Saltado (Peruvian Beef Stir Fry)
Thursday: Honey Balsamic Grilled Chicken and Vegetables
Friday: Grilled Shrimp and Watermelon Chopped Salad
Saturday: Dinner Out
Sunday: Three Cheese Zucchini Stuffed Lasagna Rolls with salad

EGGPLANT MEATBALLS

  • (25.25 ounce jar) DeLallo Pomodoro sauce

SHRIMP SCAMPI TACOS WITH CAESAR SALAD SLAW

  • Skinny Creamy Caesar Dressing  (ingredients follow)
  • unsalted butter
  • extra-virgin olive oil
  • garlic
  • peeled and deveined jumbo shrimp
  • red pepper flakes
  • lemon
  • Italian parsley
  • corn tortillas
  • romaine lettuce leaves
  • freshly grated Parmesan cheese
  • scallions

SKINNY CAESAR DRESSING

  • freshly grated Parmesan cheese
  • lemon
  • garlic
  • Dijon mustard
  • anchovy filets
  • extra-virgin olive oil
  • 0% fat Greek yogurt

LOMO SALTADO (PERUVIAN BEEF STIR FRY)

  • canola cooking spray
  • potato, russet or yukon gold
  • olive oil
  • garlic powder
  • lean sirloin
  • cumin
  • red onion
  • yellow bell peppers
  • jalapeno
  • garlic
  • tomato
  • low sodium soy sauce (use tamari for gluten free and coconut aminos for whole30)
  • apple cider vinegar
  • cilantro

HONEY BALSAMIC GRILLED CHICKEN AND VEGETABLES

  • thin sliced chicken cutlets
  • homemade pesto (or store bought)
  • garlic
  • crushed red pepper flakes
  • lime
  • olive oil
  • balsamic vinegar
  • raw honey
  • asparagus
  • zucchini
  • red bell pepper
  • olive oil cooking spray

SKINNY BASIL PESTO

  • basil
  • garlic
  • grated parmesan
  • olive oil

GRILLED SHRIMP AND WATERMELON CHOPPED SALAD

  • DeLallo golden balsamic vinegar
  • shallots
  • extra virgin olive oil
  • shelled and deveined (about 24) large shrimp
  • garlic
  • seasoned salt (I used Montreal Steak Grill Mates)
  • romaine
  • watermelon
  • soft goat cheese

THREE CHEESE ZUCCHINI STUFFED LASAGNA ROLLS

  • lasagna noodles (use brown rice lasagna noodles for gluten free)
  • olive oil
  • garlic
  • zucchini
  • part skim ricotta cheese (Recommend: Polly-o)
  • grated Parmesan cheese
  • egg
  • Marinara sauce (ingredients below)
  • part skim mozzarella cheese, shredded
  • fresh basil for garnish (optional)
  • salad

QUICK MARINARA SAUCE

  • olive oil
  • garlic
  • 28 oz can crushed tomatoes (I like Tuttorosso)
  • bay leaf
  • oregano
  • fresh basil
