Monday: Summer Cavatelli with Corn, Tomatoes and Zucchini
Tuesday: Greek Scallop Tacos
Wednesday: Honey Balsamic Grilled Chicken and Vegetables
Thursday: Grilled Flank Steak with Chimichurri with grilled corn
Friday: Seared Tuna Salad with Wasabi Butter Sauce
Saturday: Dinner Out
Sunday: Baked Chicken Parmesan with whole wheat spaghetti

Shopping List:

SUMMER CAVATELLI WITH CORN, TOMATOES AND ZUCCHINI

  • fresh or frozen cavatelli
  • olive oil
  • 2 ears corn (kernels cut from the cob)
  • cherry tomatoes
  • zucchini
  • garlic
  • homemade marinara sauce
  • grated Pecorino Romano
  • fresh basil

QUICK MARINARA SAUCE

  • olive oil
  • garlic
  • can crushed tomatoes (I like Tuttorosso)
  • bay leaf
  • oregano
  • fresh basil

GREEK SCALLOP TACOS

  • garlic cloves, skin left on
  • jalapenos
  • olive oil
  • fresh cilantro, leaves only
  • fresh parsley, leaves only
  • cucumber
  • Haas avocado
  • fresh scallops

  • corn tortillas

HONEY BALSAMIC GRILLED CHICKEN AND VEGETABLES

  • boneless, skinless thin sliced chicken cutlets
  • homemade pesto (or store bought)

  • crushed red pepper flakes

  • balsamic vinegar
  • raw honey
  • asparagus
  • zucchini
  • red bell pepper

SKINNY BASIL PESTO

  • basil
  • garlic
  • grated parmesan

GRILLED FLANK STEAK WITH CHIMICHURRI

  • flank steak
  • garlic powder
  • ground cumin
  • dried oregano
  • fresh parsley
  • cilantro
  • red onion
  • garlic
  • extra virgin olive oil
  • apple cider vinegar
  • crushed red pepper flakes
  • fresh corn on the cob

SEARED TUNA SALAD WITH WASABI BUTTER SAUCE

  • panko bread crumbs (or gluten free panko)
  • black and white sesame seeds
  • raw ahi or yellowfin tuna steaks (I used Trader Joes frozen ahi tuna steaks)
  • Canola oil or cooking spray
  • reduced sodium or gluten-free soy sauce
  • prepared wasabi paste
  • shallots
  • white wine (I used Sauvignon Blanc)
  • whole milk
  • unsalted butter
  • fresh baby arugula
  • fresh baby spinach
  • sliced radish, for garnish (optional)
  • sliced cucumber, for garnish (optional)

BAKED CHICKEN PARMESAN

  • chicken breast
  • seasoned breadcrumbs (I used whole wheat)
  • Parmesan cheese
  • butter, melted (or olive oil)
  • reduced fat mozzarella cheese (I used Polly-o)
  • marinara or Filetto di Pomodoro
  • cooking spray
  • whole wheat spaghetti

  • imported crushed tomatoes (Tuttoroso)

  • carrots
  • fat free chicken stock
